The pabassine are Sardinian sweets of walnut shortbread and sultanas with a full and fragrant flavor, originally linked to the country season of the harvest, now accompany the fine palates throughout the winter until summer. In a glazed variant with the strong flavors of citrus fruits or myrtle.
